It will be taught by a microbiologist from Tillamook Cheese Factory and will go into everything you need to know about soft cheeses (feta and goat cheese) as well as touching upon some other related cheese styles (think ricotta and softer Italian cheeses). She will also give some insight into commercial cheese production as well as the microbiology of what is happening behind the scenes during cheesemaking. This promises to be a great class.
