| Perennial Brown Ale: Mild, smooth and clean, this is a light-bodied, light-flavored version of a classic American porter. Great for easy-quaffing, this beer has a slightly sweet finish (although ask for the more bitter version, if you detest sweetness), and a nice caramel richness. | Mount Jefferson Porter: Similar to Black Butte Porter, this is a wonderfully rich caramel chocolate-like porter with just enough hops to balance the sweetness and make it all come together like no other beer can. This is one of my most popular recipes and a standby year-round for those that like dark beers full of nutty, chocolate goodness. PRICE: $32.00 |
| Thomas Jefferson Porter: Much different from the beer above, this is based upon old-style American porters, where the malting conditions were not precise, and the beers frequently had a deep, bitter burnt flavor. This is a very flavorful, roasty "stout-y" porter, excellent for those that like a little more bite in their beers. PRICE: $32.00 |
| Mrs. O'Leary's Irish Stout: A dry, Irish-style stout, this is a great session stout that is meant for everyday consumption. With very little rich maltiness, this beer has a bitter hop-bite and a pleasant roasted backbone making it an all-around perfect beer for those that like stouts. | West Coast Stout: Take an already great stout, add some American-style hops for extra bittering, flavor and aroma. Complement it with more chocolate grains for nutty smoothness and some extra black malt for burnt complexity, and you have the classic West Coast variant on the classic. PRICE: $33.00 |
| Oatmeal Stout: A bit bigger and heavier than the two stouts listed above, this has a bit extra malt and an entire pound of oatmeal to add a creamy, "silky" quality all its own. Still, expect this stout to have the roasty "bite" that is necessary in this style, but this one goes down like velvet. PRICE: $34.00 |
Cream Stout: A bit less bite, and a bit more chocolate, this is definitely NOT a porter, but still exhibits some of that smooth nutty quality. This beer has a noticeable sweet finish from the addition of non-fermentable lactose, and uses very little hops. For the lover of malty, roasty beers, this one is great - particularly in winter.

| Russian Imperial Stout: The biggest and heaviest of the stouts, this has an alcohol level approaching 8 percent, and lots of heavy, malty roasty flavor. But don't worry, me lads: along with that malty heaviness comes lots of hops and a strong bitterness which all make this beer one for aging. Best after six or eight months in the bottle.
