This kit is geared for the wine-maker who wishes to use mostly the high-quality juices (and cider kits) that are available from Spagnols. The primary fermenter is not as large, because there is no pulp to deal with, but the secondary fermenter is a 6-gallon carboy (not five) because the kits are geared for 6-gallons of wine, apiece. The additional five-gallon carboy (tertiary fermenter) is a nice touch to make sure your wine is fully polished (clarified) before bottling.

The "Do-It-From-Scratch Kit" - Version 1: Fruit Wine Kit:

This kit is geared to allow the wine-maker (or cider-maker) to make 5-gallon batches of wine or cider using fresh fruit, fresh flowers, fresh nuts, fresh vegetables or other ingredients collected from the field. This means you need to provide your own raw materials: homegrown fruit, fresh-pressed apple juice, dandelion petals, etc. You should gather the fruit or produce when they are in peak of season. The main difference between this kit and the one above it is that this has an extra-large (12-gallon) plastic primary fermenter to allow the fruit pulp to ferment with the liquid for five or six days. The "Do It From Scratch Kit - Version 2: White Grapes

This kit is geared for the winemaker who is mostly trying to make white grape wines: Pinot Gris, Chardonnay, Gewurtztraminer, Reisling, etc. It has a smaller primary fermenter (because you will not typically ferment any pulp with your juice in your primary fermenter) and it eliminates the nylon mesh bag, because, really, to do it properly, you will probably need to beg, borrow, buy or rent a destemmer/crusher and grape press to squeeze the juice out of your grapes. Please note that Main Street rents "destemmer/crushers" and wine presses for $17.50 each unit. This kit also includes a 6-gallon carboy, as well as a 5-gallon carboy so that you can rack down into a smaller volume with each transfer, thus avoiding oxidation problems. The "Do It From Scratch Kit" - Version 3: Red Grapes

This kit is designed for those wanting to do five to six-gallon batches of red grape wine using fresh grapes either picked from the local vineyards, or acquired through our Fall Grape Purchase. This kit can easily make Pinot Noir, Merlot, Cabernet, Syrah, Sangiovese, etc. It has a 24-gallon primary fermenter, which can easily hold 100 pounds of crushed/destemmed red grapes while they ferment. It also includes a two six-gallon glass carboys, and a five-gallon glass carboy; we even throw in a one-gallon glass jug because at one point or another, you will probably need it! This makes it easy to siphon from fermenter to fermenter wihtout putting the wine into "holding tanks." It has no straining bag, because (unless you are crazy) you *will* need to beg, borrow, rent or buy a destemmer/crusher and a wine press to comfortably deal with your grapes. If you follow our Grape Wine Information Page, and get good quality fruit (!!) you should have no trouble making incredible red grape wine.
